Ingredients

12 butchers style sausages

2 small red onions, cut into wedges

2 garlic cloves, crushed

200g courgettes, chopped

1 aubergine, chopped

2 yellow peppers, deseeded and chopped

few sprigs rosemary

2tbsp olive oil

200g cherry tomatoes

Preparation

Heat oven to 200C, Gas 6. Put the sausages into one very large or 2 smaller roasting tins, cook for 5 mins.

2 Add the onions, garlic, courgettes, aubergine and peppers to the tins. Sprinkle over rosemary and drizzle with oil. Roast for 25 mins.

3 Turn sausages and vegetables, add tomatoes and cook for 5 more mins, until vegetables are tender and sausages are golden.
