Ingredients

1 1/2C all-purpose flour

1 1/2C milk

3 large eggs

2T butter, melted

1t coarse salt

1lb sausage

1T olive oil

5 whole scallions

10 cherry toms

Preparation

  1. preheat oven to 425
  2. blend flour, milk, eggs, butter and salt with hand or stand mixer
  3. add oil to skillet and brown sausage and scallions
  4. pour batter over sausages and scallions and top with tomatoes
  5. bake until puffed and set, about 30 minutes
