Ingredients

2 servings rice

1 can petite diced tomatoes

½ green pepper, diced

½ red pepper, diced

1 can mixed vegetables

1 can black beans

½ jar fried onions

Preparation

Preheat oven to 350º Cook Rice Layer rice on bottom of casserole dish Drain mixed vegetables and pour over rice Top with French-fried onions Cook for 20-25 minutes Let cool for 5 minutes before serving.
