Ingredients
4 Red Bell Peppers, washed, topped and seeded
2 lb Chicken, cut into small pieces
1 pkg Spanish Rice Flavor, cooked
1 Small Onion, chopped
1 tsp Garlic, chopped
1 Egg
3 cups V8 Juice
Salt & Pepper, to taste

Preparation
Preheat oven to 350 degrees F. Mix chicken and other ingredients (expect for bell peppers and V8 juice). Stuff bell peppers. Pour juice over peppers. Cover and bake for 1 1/2 to 2 hours.
