Ingredients

1/4 cup Coconut Milk

1/2 cup Peanut Butter

1 tablespoon Sesame Oil

2 tablespoons Soy Sauce

2 teaspoons Garlic [minced]

1 piece Ginger [peeled, grated]

1 tablespoon White Vinegar

1 tablespoon Sugar

1 pound Lo Mein Noodles [or spaghetti]

1 pound Chicken [cooked, shredded]

1/4 cup Cilantro [chopped]

4 Scallions [chiopped]

Preparation

  1. In a large mixing bowl, mix coconut milk, peanut butter, sesame oil, soy sauce, garlic, ginger, vinegar, and sugar until well incorporated.

  2. Toss noodles and chicken with coconut-peanut mixture. Serve in a large bowl with cilantro and scallions.
