Ingredients

1/4 teaspoon Salt

1 pound Shrimp [peeled, deveined]

3 Limes [juice of]

1 Orange [juice of]

1 Red Onion [diced]

2 Jalapenos [minced]

1 cup Cucumber [peeled, sedded, diced]

1 cup Cherry Tomatoes [chopped]

3 tablespoons Cilantro [chopped]

1/4 cup Mayonnaise

2 tablespoons Hot Sauce

8 Tostadas [toasted tortillas]

1 Avacado [sliced]

Preparation

  1. Bring a large pot of well-salted water to a boil. Turn off heat, add shrimp, and poach until shrimp are pink and cooked through, about 3 minutes.

  2. Drain, let cool, then chop shrimp into bite-size pieces. In a large bowl, combine shrimp with lime juice, orange juice, onion, and jalapeños. Season with salt, then let marinate in the refrigerator, 1 hour.

  3. Stir in cucumber, tomatoes, and cilantro. Taste and adjust seasoning.

  4. Make spicy mayo: In a small bowl, mix together mayo and hot sauce. Spread onto tostadas, then add ceviche.

  5. Top each tostada with sliced avocado and serve immediately.
