Ingredients

20 Large Shrimp or 2 lbs boneless chicken

1 Bell Pepper

4 Small Sweet Peppers

4 nice sized fresh Mushrooms, quartered

1 Red Onion

2 Tablespoons Light Soy Sauce

2 Tablespoons Orange Juice

1 Tablespoon Honey

1/2 - 1 Teaspoon Blackened or Cajun Seasoning

1 Tablespoon Canola Oil (anything other than olive oil)

1/4 cup lemon juice

Salt to add just before cooking

Baste with orange marmalade (optional)

Preparation

Directions:

  1. Thaw and peel the Shrimp or cube the chicken

  2. In a microwave safe bowl put the Honey, Soy Sauce and orange Juice, microwave for about 20 seconds to melt the honey. Mix and pour over the Shrimp sprinkle with blackened or Cajun seasoning. Mix, cover and refrigerate for about an hour.

  3. Cut all vegetables into bite sized pieces and put in a bowl.

  4. Mix the lemon juice, oil, and pepper together and pour over the vegetables. Mix to coat. Cover and set aside, they do not have to be refrigerated.

  5. Thread shrimp or chicken and vegetables on skewers, salt and grill for 6-8 minutes or until meat is cooked.

Wonderful served with a sweet fruit like mango or pineapple.
