Ingredients
1 pound shrimp, raw
10 flour tortillas, habenero flavor, if available
16 ounces grated cheeses, combo
1/2 bunch cilantro, chopped
2 each limes, juiced
garlic salt & pepper
Preparation
Squeeze limes into large bowl. Stir in half of the cilantro.
Dice shrimp; dry. Saute quickly in hot oil 3 minutes. Stir into lime/cilantro mixture to coat.
Spray baking sheets with PAM. Place half the tortillas on the baking sheets and divide cheese, shrimp, and remaining cilantro across the 5 tortillas. Sprinkle small amount of garlic salt and pepper over cheese. Cover each quesadilla with another tortilla. Spray tops of tortillas with PAM.
Bake at 350 degrees for 10-20 minutes or until cheese is melted.
