Ingredients

2 dl (a bit less than one cup) uncooked quinoa

4 dl vegetable broth

1 cucumber

3-4 medium-sized tomatoes

1 large avocado

About 1 tablespoon olive oil

1 teaspoon lemon juice

Salt and pepper

Preparation

Cook the quinoa in the vegetable broth, as directed on the package (about 10-15 minutes, then take off heat and leave with the lid on for a few minutes).

Meanwhile, chop the vegetables to a size you prefer. Mix everything together in a large bowl, and add salt and pepper to taste.

Serve immediately, leave on the counter while you prepare the rest of your meal, or refridgerate for later use.
