Ingredients

1 1/4 cups Ketchup

1/4 cup Siracha

1/2 cup Onion [chopped]

1/2 cup Carrots [chopped]

1/2 cup Celery [chopped]

3/4 cup Parsley

2 teaspoons Garlic [minced]

1/2 teaspoon Salt

1/4 teaspoon Pepper

3/4 cup Panko Bread crumbs

1 Egg [beaten]

1 pound Ground Beef

1 pound Ground Pork

6 Lettuce leafs

1 Large Tomato [sliced]

1 Red Onion [sliced]

8 slices Crusty Country Bread

Preparation

  1. Preheat oven to 375° and line a sheet pan with parchment paper. In a small bowl, mix together ketchup and Sriracha and set aside

  2. In the bowl of a food processor add onion, carrot, celery, parsley and garlic. Pulse until combined, then transfer to a large mixing bowl. Add salt, pepper, panko and egg and mix together with a spoon. Add meat and 1/2 cup Sriracha-ketchup sauce, then mix by hand until just incorporated

  3. Divide meatloaf into 4 equal parts. Shape each into a rectangle about 1" high and place on parchment paper. Spread 1 tablespoon sauce on each piece using back of a spoon or a brush, then bake for 20 minutes.

  4. Assemble sandwiches by layering lettuce, tomato, onion and meatloaf between 2 pieces of bread. Serve with remaining sauce.
