Ingredients

1 yellow onion, thinly sliced

1/2 cup water

1 1/4 lbs medium Yukon Gold potatoes (about 5), sliced into 1/4 inch thick rounds

1 tbl olive oil

2 tbl fresh rosemary

1 1/2 tsp kosher salt, divided

3/4 tsp black pepper, divided

1 tbl ground coriander

8 chicken drumsticks (about 2 lb total)

Preparation

  1. Heat the oven with the oven rack in the low position to 425 degrees.

  2. Scatter onions over the bottom of a large, ovenproof skillet. Add water.

  3. Lay the potatoes over the onions.

  4. Drizzle with olive oil.

  5. Sprinkle rosemary leaves over the potatoes, along with 1 tsp salt & 1/4 tsp pepper.

  6. Combine the coriander with remaining salt & pepper.

  7. Rub spices into both sides of chicken legs.

  8. Lay chicken over the potatoes.

  9. Roast until chicken is cooked through & potatoes are tender, about 1 hour.
