Ingredients
16 Piller’s Skinny Bites Minis, halved lengthwise
3 ripe tomatoes, diced
60 ml (1/3 cup) red onion, finely chopped
30 ml (1 Tbs.) olive oil
6 basil leaves, chopped
salt and pepper to taste
16 crostini toasts
60 ml (1/3 cup) shaved Parmesan, if desired
Preparation
In a medium bowl mix the tomatoes, garlic, onion, and olive oil. Season to taste with salt and pepper. Gently stir in basil leaves. Arrange crostini toasts on a platter. Use a slotted spoon to evenly divide tomato mixture on each toast. Top each with two halves of Minis. If desired, top with shaved Parmesan. Serve immediately.
