Ingredients
Sauce:
1 cup fresh parsley; finely chopped
1 cup fresh cilaantro; finely chopped
1 bunch scallions; finely chopped
1 garlic clove; finely chopped
1 T oregano; finely chopped
1/2 c olive oil
1/4 c red wine vinegar
Salt and Pepper
Steak:
1.75 # Skirt steak, room temperature
Salt and Pepper to taste
Oil for grill
Preparation
Prepare chimichurri sauce: Mix all ingredients and season to taste with salt and pepper. Refrigerate and bring to room temperature before serving over grilled steak
Pat steak dry. Season with salt and pepper. Grill on oiled grill/grates over medium-high heat, 2-5 minutes per side, depending on thickness, for medium rare. Let rest 5 minutes; slice on the diagonal.
