Ingredients

1 pound dried white beans (Ranch Gordo pinquito)

2 medium onions, coarsely chopped

¼ cup dark brown sugar

¼ cup molasses

1 tablespoon tomato paste

1 tablespoon dry mustard

¼ pound piece slab bacon, cut into strips

4 cups water, or more if necessary

½ teaspoon salt

¼ teaspoon pepper

Preparation

Drain and rinse beans, add to pot. Add the onions, brown sugar, molasses, tomato paste, mustard, and bacon. Add the 4 cups water, salt, and pepper. Cook on slow 6 to 8 hours, checking water near end.
