Ingredients

2 pounds boneless, skinless chicken thighs (about 6)

3 garlic cloves, sliced

1 cup prepared tomato salsa, plus more for serving

1 Tbsp chopped canned chipotle chiles in adobo

1 Tbsp Chili powder

kosher salt and ground pepper

8 hard or soft taco shells

garnishes: cilantro, shredded cheese, sour cream, guacamole, lime wedges

Preparation

  1. In a slow cooker, combine chicken, garlic, salsa, chiles, chili powder, salt & pepper. Cover, cook on high, 4 hours or low for 8 hours.

  2. Transfer chicken to a serving bowl and shred, using two forks; moisten with cooking juices. Serve in taco shells, with toppings, if desired.
