Ingredients
⢠3 pounds fresh or frozen peaches, peeled (if fresh) and sliced
⢠1/2 cup apple butter
⢠1/4 cup brown sugar
⢠1/4 cup bourbon, optional
⢠1/4 teaspoon salt
⢠2 cups homemade baking mix (or use store-bought)
⢠2/3 cup whole milk
⢠1/2 cup sugar
⢠1/4 cup (1/2 stick) unsalted butter, melted
⢠1 1/2 teaspoon cinnamon
Preparation
- Place peaches in slow cooker and add apple butter, brown sugar, bourbon (if using) and salt.
- Stir together until peaches are evenly coated and then spread out into an even layer.
- In a large bowl, combine baking mix, sugar and cinnamon, and stir together.
- Pour in milk and melted butter and mix until just incorporated.
- Drop large spoonfuls of batter onto peaches, making sure to cover the entire surface.
- Top slow cooker with a paper towel and cover with lid. (This makes sure moisture is absorbed, so crust topping can actually crisp up.)
- Turn on HIGH and cook for about 5 hours (or on LOW for 8), or until crust is golden brown and toothpick inserted in center comes out clean.
- Uncover and serve hot with whipped cream or ice cream.
