Ingredients

1tbsp olive oil

1 cup onion, small dice

8 cloves garlic, crushed

4 ½ lbs fresh tomatoes deseeded and chopped or 2 x large 28oz cans plum tomatoes

6oz can tomato paste

1tbsp fresh oregano or marjoram (or 2 tsp dried)

1 tbsp fresh rosemary (or 2 tsp dried)

¼ cup red wine (used chicken stock and splash of balsamic vinegar)

1 tsp salt

1 tsp black pepper

2 generous tsp sugar

onion powder

3 lbs ground turkey, browned

fresh basil

thyme sprigs

Preparation

Combine all ingredients except turkey in slow cooker, cook on high for 4 hours, low for 4 hours, add turkey and cook on low until sauce is desired consistency. Vent lid to thicken.
