Ingredients

21/2 to 3 lbs beef church roast, fat trimmed

1 cup BBQ sauce

1/2 cup apricot preserves

1/2 cup bell pepper , chopped

1 Tblsp Dijon mustard

1 1/2 tsp brown sugar

1 medium onion sliced thinly

1/2cup jarred mild or medium salsa

12 rolls

Preparation

Mix all ingredients , pour over meat , cook 9 hrs on low or 41/2 to to 5 hrs on high in crock pot.. Slice or pull apart
