Spaghetti squash
misc veg - I used carrots, snap peas, mushrooms, zucchini, peppers, onions and roasted tomatoes
chicken (optional)
Pesto sauce
coconut milk
broth
Preparation
- bake spaghetti squash at 375 for approx 45 mins
- saute onions and vegetables, add chicken and heat through
- make pesto sauce, combine on the stove with coconut milk and broth
- pour sauce over veggies and spaghetti squash
