Ingredients

1 spaghetti squash

1 tsp dried oregano

1 tsp dried basil

Extra virgin olive oil for drizzling

salt/pepper to taste

Preparation

Preheat oven to 400 degrees. Place squash in microwave 3-4 minutes to soften then cut in half lengthwise. Scoop out seeds and discard. Place the halves, cut side up on rimmed baking sheet. Drizzle with olive oil and sprinkle with seasonings. Roast for 45-50 minutes, until you can poke squash easily with a fork. Let it cool until you can handle it safely. Then scrape the insides with a fork to shred into strands.

After removing squash from oven, add shrimp scampi and parmesan cheese.
