Ingredients

1 cup olive oil

1 lb potato

1 med onion

6 eggs

1 t salt

Preparation

  1. Heat oil in pan on med heat
  2. Add thin sliced potatoes, cook for 6-8 min, add onions and cook for remaining 12-14 min.
  3. Whisk together eggs, salt, fresh cracked pepper
  4. Drain potatoes and onions (save oil), and fold into egg mixture
  5. Reheat pan to med-high (hot is important to prevent sticking), pour mixture into pan and cook 5 min per side
