Ingredients
2 SM Spagetti Squash
2 pounds Ground Protein (I used Bison)
1 tablespoon Chopped Garlic
1 Chopped Red Onion
1 cup Chopped Brown Mushrooms
1 cup Chopped Cilantro
1 cup Chopped Baby Spinach
1/2 cup Ricotta Cheese
1/2 cup Shreaded Mozerella Cheese
1 jar Spagetti Sause
2 tablespoon Ground Pepper
1 pinch Kosher Salt
5 Chopped Jalepenos
Preparation
Heat Oven to 350 and pan on medium high w/olive oil
Chop onion, cilantro, jalepenos,spinach, mushrooms and sauntee w/garlic and olive oil. Set aside.
Brown protein, drain and set aside.
Half spagetti squash, brush w/olive oil, garlic, salt and pepper bake face down for 40-50 min
Once meat is browned, drain and pour in spagetti sauce and sauntee on med/low
When Squash is done, shread with a fork and mix w/greens, onion, garlic and cheeese.
Layer in small baking dish w/squash on bottom, then meat mixture, then squash, then meat and top w/mozerella. Bake for 20 min. Let cool and serve.
