Ingredients
1 small onion, minced
2 T olive oil
16 oz frozen chopped spinach, thawed and squeezed
12 oz mascarpone cheese
1/2 t. salt and pepper
1/4 t cayenne
1/2 c. grated parmesan plus some for topping
1 loaf baguette, sliced and toasted
Preparation
saute onion in oil. add spinach and cook until hot. Add mascarpone and parmesan and stir. Pour into custard dish, top with additional parmesan and bake at 350 for 20-30 minutes until bubbling
