Ingredients
1 zucchini
1 yellow squash
1/3 onion
4 mushrooms
2 pieces chicken
2 slices bacon
4 campari tomatoes
8 black olives
1 tablespoon capers
4 ounces feta cheese
3 cloves garlic
1 tablespoon cajun spices
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon butter
Preparation
cut boneless thighs into 1 inch pieces, set aside and sprinkle cajun spices over.
chop onion and mushroom into pieces, set aside
cut tomatoes, black olives and feta in a large dice add capers set aside
chop bacon into 1/2 inch squares
chop garlic into mince
spiralize the zucchini and yellow squash set aside.
melt the butter in a pan and saute the onion and mushrooms remove and set aside
render the bacon until crisp set aside leave fat in pan add chicken and garlic to the pan cook until done
Remove the chicken when done and add the the zucchini, yellow squash, tomatoes, black olives, capers and feta to the pan and heat and serve.
serve when heated
