Ingredients
1 400 g bread - 200 g = 100%
100% wheat flour
1% spirulina powder
5% organic sugar
60% cold filtered water
45% mature natural yeast (Andreu?)
2% pink Himalayan sauce
Preparation
Mix flour with sugar and spirulina Make hole in center and fill w water. Knead with finger tips. Dissolve/Distribute natural yeast in mixture well. Add remaining water. Continue working dough. Add salt and knead for about 3 min. Cover for 4-5 hrs or until it doubles in volume. Scrapescoop out of bowl onto smooth surface Press the dough into a rectangle that is as long as the loaf pan and slightly less than twice as wide as it is long. At the narrow end, roll the dough tightly, jelly-roll style. Pinch the ends and seam to seal, turning the ends under if necessary. (
