Ingredients
4 cups fresh squash
1 large onion
2 eggs
3/4 cup milk
1/2 cup margarine
1 pkg Ritz crackers
1 cup grated cheddar cheese (White Cracker Barrel Cheddar)
salt and pepper to taste
Preparation
Cook squash and onion; drain and mash up. Beat eggs and milk; add to squash. Combine margarine, cheese, and crackers. Add 1/2 of cracker mixture to squash mixture. Sprinkle remaining cracker mixture on top. Bake 20 to 30 minutes in a 2-Qt casserole dish at 400 degrees F. Yields 6 - 8 servings.
