Ingredients
4 Acorn Squash
1 Box of TJ cornbread stuffing
1/2 cup Dried cranberries
8 ounces Mushrooms
4 cloves Garlic chopped
1 cup Chopped onions
4 cups Vegetable broth
4 tablespoons Butter
Preparation
Split squash in half and place cut side down in glass dish and cover with plastic wrap. Microwave for 14 minutes.
Scoop seeds out and place on baking sheet and season cavity with salt and pepper and add dab of butter
While squash is cooking, saute mushrooms, onions and garlic in butter
Add broth and cranberries and bring to a boil. When broth boils add seasonings and stuffing mixture.
Spoon stuffing into squash and bake for 30 minutes at 350.
