Ingredients

3 tablespoons butter

1/2 pound lump crab

1/4 cup minced onion

2 ribs celery - minced

1/2 green bell pepper - minced

2 cloves garlic - minced

2 tablespoon mayo

1 beaten egg

4 teaspoon lemon juice

1 teaspoon hot sauce

3/4 cup ritz crackers - crushed

1/4 teaspoon black pepper

1 1/2 pound flounder filets

1 lemon - thinly sliced

3 tablespoon melted butter

2 tablespoon parsley

1/4 teaspoon worcestshire sauce

Preparation

preheat oven to 350 - middle rack

grease baking dish w/1/2 TB of butter

In a medium skillet, melt the remaining 2 1/2 tablespoons of the butter over medium-high heat.

Add onion & bell pepper & cook for 4 miunutes then add parsley & garlic for 1 more minute

after cooling vegtables, mix w/crab, mayo, hot sauce,worcestshire, egg, lemon juice and 1/2C crackers

lay out filets and pepper each one then place filling on and roll up

In pan put lemon slice on each filet, top w/reamining crackers and drizzle with melted butter

bake for 20 minutes
