Ingredients

2 lbs Meatloaf Meat (beef,pork,lamb)

2 eggs beaten

1/2 cup tomatoe juice

2 tbsp parsley

1/2 tsp oregano

1/2 tsp salt

1/2 tsp pepper

1/2 clove garlic

Mozzerella cheese

Sliced Virginia Ham

Spinach

Preparation

Heat oven to 350 Combine all ingredients except cheese, ham and spinach. Layout a long sheet of foil next to a greased loaf pan Put meat mixture on foil, size width to pan, flatten ti 3/4 inch with length about 18" Lay spinach on top of meat, then slices of Mozzerella, then ham on top. Roll the meatloaf using the foil and drop seam side down into the loaf pan. Press firmly on top to remove any air. Bake for one hour.
