Ingredients
4 poblano peppers
1 jalapeno peppers, diced
1/2 videlia onion, diced
taco seasoning (One packet or to taste)
salsa - 1/3 cup to mix in with the meat and more to garnish
sour cream, to garnish
queso fresco or nacho type cheese, to garnish
salt & pepper
Preparation
preheat oven to 500 degrees. Wash, seed, and cut poblano peppers in half. Roast peppers for 10 minutes until at desired doneness.
Brown meat, onion, and jalapeno until meat is cooked. Add in taco seasoning and salsa and cook for a couple more minutes. Cover the peppers with the meat mixture and bake for 50 minutes, or until warmed through and browned on top. Serve with salsa, sour cream, and cheese.
