Ingredients
Cookies:
1 1/2 cups sugar
1 cup butter
3 eggs
1 tsp vanilla extract
1/2 tsp lemon extract
4 1/2 cups flour
1/2 tsp salt
1 tsp baking soda
Icing:
1/2 cup butter
2 cups powdered sugar
1 egg yolk
1 tablespoon half & half
1/2 tsp vanilla extract
1/2 tsp lemon extract
Preparation
Cream the sugar and butter together, then add eggs one at a time, mixing just until the yellow disappears. Add lemon & vanilla extracts. In 3 batches, add the combined dry ingredients, mixing only until the dough comes together.
Roll dough to 1/8 - 1/4" thick and cut with cookie cutters. Bake at 350 degrees for about 8 minutes, watching carefully.
Combine all icing ingredients, and frost when cookies are cool.
