Ingredients

Salad:

2 heirloom tomatoes, chopped

2 peaches, chopped

1 zucchini, chopped

Dressing:

1 tbsp sherry or balsamic vinegar

1 1/2 tsp extra-virgin olive oil

1 tsp honey

Sea salt & freshly ground black pepper

5 leaves of fresh basil, chopped or torn

Preparation

  1. Combine salad ingredients in a large bowl.
  2. Whisk together dressing ingredients in a small bowl.
  3. Drizzle vinegar mixture over peach mixture. Stir well to coat.
  4. Sprinkle with basil.

Enjoy! Can be served immediately or chilled if you desire.
