Ingredients
Pair with 1lb pasta
Olive Oil
2-3T butter
2 garlic cloves, sliced
1C coarsely chopped shallots
2 Pints cherry toms, halved
3/4C basil, chopped
1C Parmesan cheese, grated
Preparation
- Heat oil in large saucepan
- add shallots and saute for a while, stirring occasionally until they become soft, about 10-15 minutes
- add garlic and cook until shallots are very soft
- add toms and stir
- add butter one chunk at a time
- cook until shallots are cooked all the way, about 30 mins longer
- add basil, S&P and serve topped with cheese
