Ingredients

OLD FASHIONED MEAT LOAF

2 cups finely chopped onion

1 tablespoon minced garlic

1 celery rib, chopped fine

1 carrot, chopped fine

1/2 cup finely chopped scallions

2 tablespoons butter

2 teaspoons salt

1 1/2 teaspoons finely ground fresh black pepper

2 teaspoons Worchestershire sauce

2/3 cup ketchup

1 1/2 pounds ground chuck

1/2 pound ground pork

1 cup fresh bread crumbs

2 eggs, beaten

1/3 cup minced fresh parsley

SCALLOPED POTATOES

3 tablespoons butter

1/2 cup flour

2 cups chicken broth

1 1/2 cups grated cheddar cheese

2 pounds boiling potatoes

1/2 cup fresh bread crumbs

Preparation

OLD-FASHIONED MEAT LOAF Cook onion, garlic, celery carrot, and scallion in butter over moderate heat, stirring, for 5 minutes. Cover, stirring occasionally, until carrot is tender. Stir in Salt, pepper, Worchestershire sauce and 1/3 cup of the ketchup and cook, stirring, 1 minute. In a large bowl, combine all ingredients but the last 1/3cup ketchup. In a shallow pan form mixture into a 10X5 in oval loaf.Spread remaining ketchup over top. Bake at 350 for 1 hour or until internal temperature reaches 155 degrees.

SCALLOPED POTATOES In a heavy sauce pan, melt butter over low heat and whisk in flour. Cook “roux” whisking for 3 minutes and add broth in a stream. Bring to a boil and continue whisking, about 2 minutes, until thickened slightly. Remove from heat and whisk in cheese until melted. Add salt and pepper. Peel potatoes and slice about 1/8 inch thick. In buttered baking dish make 5 layers each of potatoes and sauce, beginning with potatoes and ending with sauce. Sprinkle bread crumbs on top and bake uncovered at 350 degrees for 1 hour or until potatoes are tender and top is golden.
