Ingredients

1 1/4 cup Mashed Sweet Potato

1/3 cup Palm Sugar

1 batch egg

1 drops vanilla

1/4 cup Almond Meal

1/2 cup Chopped Walnuts

1/3 cup Brown Sugar or Coconut Sugar

1/8 cup Melted Vegan Butter or Coconut Oil

Preparation

Preheat oven to 350 degrees. Mash the potatoes, palm sugar, eggs and vanilla together. In a separate bowl, mix the almond meal, chopped walnuts, brown sugar and coconut oil. Place the potato mix in a baking dish and spread the topping. Cook for 20 minutes uncovered at 350 degrees
