Ingredients
4 1/2 pounds Sweet Potatoes
1 cup Sugar
1/4 cup Milk
1/2 cup Butter (softened)
2 Eggs
1 teaspoon Vanilla extract
1/4 teaspoon Salt
1 1/4 cups Cornflakes (crushed)
1/4 cup Pecans (chopped)
1 tablespoon Brown Sugar
1 tablespoon Butter (melted)
1 1/2 cups Mini Marshmallows
Preparation
Bake sweet potatoes at 400 for an hour (or until tender)
Let cool, peel and mash
Beat mashed potatoes, sugar, milk, softened butter, eggs, vanilla, salt at medium speed with an electric blender until smooth
Spoon mixture into greased 11x7in baking dish
Combine cornflakes, pecans, brown sugar, melted butter in a small bowl then sprinkle over casserole in diagonal lines 2in apart
Bake at 350 for 30min
Remove from oven and let stand for 10min
Add marshmallows to top, bake 10 more minutes
Let stand for 10min
