Ingredients
1 cup all purpose flour
3/4 cup whole wheat flour
1 T double acting baking powder
2 T turbinado sugar
1 t salt
2 t cinnamon
1 t allspice
2 cups milk
1 cup cooked sweet potatoes, mashed
2 large eggs, beaten lightly
1 1/2 t vanilla
1/4 cup vegetable oil or melted butter
Maple syrup, honey, or fresh fruit as an accompaniment
Preparation
In a large bowl, stir together the flours, the baking powder, sugar, salt, cinnamon and allspice. In a seperate bowl stir together the milk, sweet potatoes, eggs, vanilla and oil (or butter). Stir the wet into the dry, stirring until it is combined well. Heat a greased griddle over moderate heat until it’s hot enough to make drops of water scatter over its surface. Working in batches, pour the batter onto the griddle by 1/4 cup measures, cook the pancakes for 2 minutes on each side, or until they are golden and cooked through. Transfer them to a heated platter. Serve the pancakes with maple syrup, honey or fruit. Makes about 24 pancakes.
