Ingredients
3 Cups fresh cooked sweet potatoes
1/3 Cup butter
2 eggs
1 Cup sugar
½ teaspoon salt
1 teaspoon vanilla
2 tablespoons flour
Topping:
1/3 Cup flour
1 Cup brown sugar
1/3 Cup butter
1 Cup chopped pecans
Preparation
Preheat oven to 350 degrees. Apply cooking spray to a 1 ½ qt. casserole dish. Using a food processor or mixer, smooth together all sweet potatoes and the rest of the ingredients. Pour into your dish. To make the topping; Crumble flour, brown sugar and butter in small bowl. Stir in pecans. Sprinkle over sweet potato mixture and bake for 30 minutes, until golden brown.
