Ingredients
3 tablespoon Cajun seasoning
1 teaspoon brown sugar
6 ounce 4 boneless salmon fillets
2 tablespoon vegetable oil
1/4 cup orange marmalade
1 tablespoon lime juice
Preparation
combine cajun seasoning, sugar, and 1/4 tsp. salt in a small bowl. rub on salmon
saute fillets in oil in a large skillet over medium-high heat for 3-4 minutes. turn and salute 2-3 minutes more.
blend marmalade and lime juice; swirl in skillet until melted. turn fish to glaze on all sides.
serve with lime wedges
