Ingredients
1 largish onion, chopped
4 tbsp. garlic, minced
4 tbsp. chili powder
4 tbsp. cumin
Salt & pepper
1-2 lb. ground beef
4-6 14.5oz cans black beans, cooked & drained
2 14.5oz cans tomato sauce
2 servings rice, prepared
32 taco shells
2 cups lettuce, shredded
4 cups cheese, grated
Green onion, chopped
Tomatoes, chopped
Black olives, sliced (optional)
Sour cream (optional)
Taco sauce (optional)
Preparation
Cook onions in small amount of oil in heavy skillet until translucent.
Add garlic; cook 30 seconds.
Add chili powder, cumin, salt and pepper. Cook 30 seconds more.
Stir in ground beef and cook until brown. Drain off grease.
Stir in black beans, rice and tomato sauce. Simmer until heated through.
Serve with heated taco shells and lettuce, cheese, green onions, and tomatoes.
Top with remaining ingredients, if desired.
