Ingredients

1 tablespoon Olive Oil

1 Onion [chopped]

1 pound Hamburg

1 can PintoBeans [rinsed, 15 oz]

1 can Corn [can]

1 can Tomatoes [fire roasted 15 oz]

2 tablespoons Taco Seasoning

1 1/2 cups Water

1/4 cup Sour Cream [for garnish]

4 stalks Scallions [sliced]

Preparation

  1. In a large Dutch oven or pot over medium heat, heat oil. Add onion and cook onion until soft, 5 minutes, then add ground beef and cook until no longer pink.

  2. Add beans, corn, fire-roasted tomatoes, taco seasoning, and water.

  3. Garnish with sour cream and green onions.
