Ingredients

1 cup butter or margarine – softened

1/2 cup powdered sugar

2-1/3 cups flour

4 each eggs

2 cups granulated sugar

1/3 cup lemon juice

1 teaspoon baking powder

confectioner’s sugar

Preparation

Grease 9x13-inch pan well. Preheat oven to 350*F.

Cream butter and powdered sugar until fluffy. Add 2 cups flour, beating until blended. Spread evenly over the bottom of the prepared pan. Bake for 20 minutes.

Meanwhile, in a small mixing bowl, beat the eggs until light and foamy.

Gradually add granulated sugar, beating until thick and blended. Add lemon juice, remaining 1/3 cup flour, and baking powder; beat until thoroughly blended.

Pour lemon mixture over hot, baked crust and return to oven. Bake 25-30 minutes or until golden and custard is set.

Remove from pan and sprinkle with powdered sugar. Cool completely before cutting into squares.
