Ingredients
1/8 c balsamic vinegar
1/4 c red wine vinegar
1/8 c white balsamic vinegar
1T honey
1t white pepper
1/2c + 2T olive oil
1 1/2 c shredded parmesan cheese, divided
3T chopped scallions
salt to taste
3/4c radishes, finely sliced (or more to taste)
Greens of choice, chopped
Fruit of choice, diced
Preparation
Zap liquid ingredients in high-speed blender until well-mixed. Blend in 1/2 c parmesan, scallions, and seasonings.
Toss with remaining ingredients and serve. Dressing can be made in advance and is best served at room temp.
