Blueberry Coconut Banana Blueberry Loaf
1/2 cup organic coconut oil
1/3 cup coconut palm nectar
2 teaspoon vanilla extract
2 eggs
1 cup brown rice flour
3/4 cup tapioca starch
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
2-3 large bananas
1/2 cup sour cream or milk
1 cup blueberries
3/4 cup shredded coconut flakes
Preparation
Preheat the oven to 350 degrees. Combine the butter and sugar in a mixing bowl and beat. Then add dry ingredients. Should coat blueberries in flour before folding into loaf.
