Ingredients

3/4 cup tapioca starch

1 cup brown rice flour

1/3 cup coconut palm nectar

1/2 cup organic coconut oil

2 teaspoons vanilla extract

1 teaspoon baking soda

1 teaspoon salt

2 eggs

1/2 cup sour cream or milk

3/4 cup shredded coconut

2-3 ripe bananas

1 cup blueberry

Preparation

  1. Grease large loaf pan.

  2. Mix coconut oil with coconut palm nectar (sugar). Then add dry ingredients. Coat blueberries in flour before folding into mixture.

  3. Bake 55 minutes at 350 degrees.
