Ingredients

1 cup Shrimp, cooked cut into 1/2 lengthwise

1 pound Ham cut into 1/2 inch cubes

4 Green onions sliced thin with tops

1/2 clove Garlic

1/2 teaspoon Salt and Pepper

1 cup Rice

2 cups Chicken stock

1 Medium green pepper finely chopped

3 Medium tomatoes peeled and diced

1/2 cup Sherry

1/4 cup Butter

Preparation

Saute shrimp and ham in butter for 5 minutes. Add onions. Mash garlic with salt and add to mix with pepper and rice. Add chicken stock. simmer for 30 minutes then add green pepper, tomatoes and sherry. simmer 5 minutes longer.
