Ingredients

1 cup Shrimp, cut lengthwise

1 pound Ham, cut into 1/2 cubes

1/4 cup Butter

4 stalks Green onions, thinly sliced, including tops

1/2 clove Garlic

1 teaspoon Salt

1/4 teaspoon Pepper

1 cup Rice

2 cups Chicken stock

1 Green pepper, medium

3 Tomatoes, peeled and diced

1/2 cup Sherry

Preparation

Saute shimp and ham in butter for 5 minutes. Add onions. Mash garlic with salt and add along with rice and pepper. Pour in chicken stock (2 bouillion cubes and 2 cups of water may be substituted). Simmer for 30 minutes. Stir in green pepper, tomatoes, and sherry. simmer 5 minutes longer.
