Ingredients
75g red curry paste
175ml coconut milk
50g brown sugar
1tbsp fish sauce
75g peanut butter
900g beef chuck steak cut into 1 inch square
2 potatoes
125ml beef stock
Chopped basil
Steamed rice
Preparation
Put curry paste, coconut milk , sugar, fish paste, peanut butter into cooker and stir to combine.
Add the beef, potatoes and stock.
Cook on high for 4 hours or low for 8 hours. Set lid ajar and cook for a further hour until the beef is tender and the sauce has thickened.
Garnish with basil and serve with rice.
