Ingredients

2 c quinoa

4 c veggie broth

1 1/2 c shredded red cabbage

1 c julienned carrots

1/2 c cilantro chopped

4-5 basil leaves minced

1/2 c green onion sliced on diagonal

1/2 c unsalted peanuts chopped

4-6 lime wedges

Dressing:

Juice of 2 limes ( 4 tbsp)

1/4 cleanup butter

3 tbsp tamari

2 tbsp honey

1 tsp sesame oil

1 tsp evoo

Water to thin

Preparation

Bring quinoa and broth to boil, cover & simmer 15 min. Remove from heat and fluff with fork. Put cooled quinoa in large bowl. Add rest of ingredients and toss with dressing. Garnish with lime wedges
