Ingredients
1 tablespoon olive oil
1 cup onion , diced
2 garlic, cloves sliced
1 tablespoon ginger, minced
1 tablespoon red thai chili paste
1 sweet potato,, diced
2 carrots, peeled and diced
3 cups Vegetable stock
3/4 cup red lentils
1 tablespoon Soy sauce
1 tablespoon lime juice
1 can coconut milk
Preparation
Cook onions for 5 minutes, add garlic, carrots and ginger.
Add red curry paste and a little stock, blend and cook for 1 minute.
Add sweet potatoes, stock, lentils, soy sauce and lime juice. cover and bring to a boil, reduce heat and simmer for 20 minutes.
Add coconut milk and serve warm.
